Panna Cotta topped with blueberries

Quick, easy, delicious….the three simple words every hostess wants to hear!  Panna Cotta fits the bill if you want something that hits all three marks.  It’s a no-brainer if you know you’re going to be rushed for time but you need to impress the guests.  Let’s get started!

Here’s all you’ll need:

1 envelope of Knox unflavored powdered gelatin

2 cups heavy cream

1 cup half and half

1/3 cup sugar

1 vanilla bean*  (or 1 1/2 teaspoon vanilla extract)

Here’s what you do:

Place your heavy cream in a small bowl and sprinkle it with your gelatin.  Let this stand for about 5 minutes then pour it all (cream and gelatin) in a saucepan.  During the 5 minutes that you’re waiting on your gelatin to “soften” prep your vanilla bean (remove the vanilla seeds from the bean pod).  You’ll need the seeds from one vanilla bean pod per batch of Panna Cotta.

Cook the heavy cream and gelatin on medium heat while stirring for about 5 minutes. Do not allow this mixture to boil.  Continue to stir as you add the half and half, sugar, and vanilla bean.  The mixture should steep as you stir for another 5 minutes to allow the sugar to melt.

Pour into serving dishes to cool and set

Remove from heat and pour into serving dishes.  Allow to cool before you place containers in the refrigerator (containers should be cool enough to comfortably pick up with your fingers).  Refrigerate for 5-6 hours.  Top with favorite topping and Enjoy!

*Vanilla Bean:  If using a vanilla bean for this recipe simply slice open the vanilla bean to expose the seeds inside. You will then be able to scrape along the bean and collect the seeds.
